Open the windows, warmer air is on its way. Some days bring rain, others wind, and then arrives the day when the sun shines and warmth is all around. Time for fish fried or on the grill. Sides of rice, pasta, or potato pancakes make the plate complete. Lighter drinks and lighter desserts help usher in lighter days.
In heavy skillet, heat oil on medium high. Rinse fish and pat dry. Coat fish in panko crumbs and place into hot oil. Fry about 3 minutes on each side. Remove to paper towel layers to drain off excess oil. Place on platter in oven to keep warm. Season with garlic salt. Serve with lemon slices.

Mix all ingredients together. Grease 9 1/2" by 11" baking dish. Bake at 350°F, 40 to 45 minutes. Do not underbake.
